The French Chamber of Hong Kong sits down with Joe for a pint and a discussion on how he’s survived two forced police closures to mold the city’s beer scene with the first brewery and founding the Shenzhen craft beer festival.
When the first incarnation of Bionic Brew’s bar & microbrewery was ordered to close by the local Shenzhen authorities, its founder Joe Finkenbinder blacked out the windows and carried on brewing in secret from the late evenings until sunrise. By day he would distribute his creation to bars around the city.
The move to a second location lasted only a couple of months before being shut down in similar fashion. Joe still isn’t sure why, but he has his guesses. Setting up your bar behind an unmarked door down an alleyway in a non-typical F&B location might be functional and hip in Brooklyn or Hong Kong. But in China, this creates problems.
“The location was not entirely on purpose. Part of it was because we wanted to test the market. Could the product stand on its own?” he says, “A lot of places get away with a mediocre product because of location. We were just about the beer. The reality is that we wouldn’t have been shut down if we were in a more mainstream shopping mall location. Here it’s a bit more old-school China, you can’t just set up wherever you like.”
We join Joe for a pint – obviously – at his third taproom in as many years in the gritty Baishizhou village in Shenzhen. A handful of outdoor tables are slowly filling up with the Friday after-work crowd when we arrive. There’s a tranquillity to it, at least for now, that you don’t expect from a city like Shenzhen. This restaurant-lined strip, he explains, was shown to him by the police as an apparently acceptable location to set up.

In just three days we demolished the place next door and combined the two spaces to open it up a bit and prepare to finally start brewing on site. New lights, new bar, lots of new art and finally a toilet, but there’s still lots to do. In September we’re going to focus on setting up the brewhouse so we can brew at?the taproom.
A lot of new faces have been coming in recently so thanks to all those who keep on coming back and?bringing your friends along. We know it’s hard to find and you pretty much have to be lead by the hand to find the right door.

So far it seems Shenzheners get a late start on their drinking and the bar is pretty dead until about 7 or?8pm. So, we decided to change the hours around a bit. The bar opens a bit later but also stays open later. Remember not to piss off the neighbors and stay inside the taproom after?midnight?and keep the doors closed. If you walk over to Rose Cafe for some food or a smoke please bring the glasses back.

Shenzhen Craft Beer Fest
The details will come out next month but we wanted to go ahead and make an announcement to our friends that BionicBrew is throwing the Inaugural Shenzhen Craft Beer Festival. It will take place November 7 & 8 from Friday evening to all day Saturday. Location TBD.
There are other beer festivals in Shenzhen but this one is different. To start, there will only be locally brewed beer from Guangdong and beyond, but no imports. We’re inviting some friends from outside Shenzhen to come and let us taste what they’ve been brewing. There will also be food from local businesses and musicians from Shenzhen and Hong Kong, and we count on you to help us spread the word. Opening in Baishizhou

Last month we told you we would be opening in late June in Shekou. Well, this is China and things change pretty fast. Due to local laws and landlords we weren’t able to get the location we expected to have as a permanent tap room, but we may still open it for a month in late summer as a pop up shop. Instead, we’re opening a small brewery right in the heart of Baishizhou near Windows of the World subway station Exit C. If you know where?Rose Cafe?is, then you know how to find us already.?We’re right across the street down the alley.
We’ve just signed the lease and expect to start renovations next week. It’s very likely that we won’t be finished renovating for at least a few weeks, maybe months depending how expensive it is, but we’ll make sure to open the doors as soon as possible even if that means drinking in very austere conditions. It’s all about the beer anyways, right?
Over the last month we’ve brewed enough beer at borrowed facilities from friends?to last us through July and we hope to start brewing in our new home in August.
